One pot lentil saffron stew

Ingredients
2 tsps Extra Virgin Olive Oil
1 Yellow Onion (medium, diced)
2 Carrot (medium, diced)
1 stalk Celery (diced)
1 tbsp Tomato Paste
1/2 tsp Cumin
3 Garlic (clove, minced)
1/4 tsp Saffron (ground)
Sea Salt & Black Pepper (to taste)
1 cup Dry Red Lentils (rinsed, drained)
2 1/2 cups Vegetable Broth
4 cups Baby Spinach (roughly chopped)
Directions
Heat a Dutch oven or large pot over medium heat and add the oil. Once hot, add the onion, carrot, and celery and cook, stirring often for five minutes or until just starting to soften.
Add the tomato paste and cumin and cook for one minute, stirring often. Add the garlic and saffron and cook for an additional minute. Season with salt and pepper.
Add the lentils and broth and stir to combine. Increase the heat to medium-high and bring to a simmer. Lower the heat slightly and continue cooking, stirring occasionally, until cooked through, about 15 to 18 minutes.
Add the spinach and stir until wilted. Divide into bowls and enjoy!
